Loaded Garlic Prawns

Serving for 1 person

8 green prawns shelled
1/2 punnet grape tomatoes halved
1/2 diced avocado
4 large cloves crushed garlic
1/2 stick chopped celery
1/4 tsp chilli flakes
slurp white wine
1-2 tsp butter

In a fry pan add butter lightly cook celery for about 1 minute.  Then add tomatoes avocado and prawns.  Sprinkle over chilli flakes and add wine.  Cook for about 2-3 minutes turning prawns over.  Add garlic then cook for another minute or two, until prawns are cooked.

I add the garlic last because I don't like to over cook or burn it.

Serve with salt and pepper if desired.

You could serve this on a bed of rice or mix through pasta.  Or serve with a nice salad.
