Spicy Meatballs
Meatballs
500g mince
2 large cloves crushed garlic
1/2 brown onion finely diced
1/2 tsp chilli flakes
1 tsp oregano
1 egg
salt and pepper
1 tsp coconut oil
Sauce
1 tin crushed tomatoes
1 large clove crushed garlic
1/2 brown onion diced
1 zucchini diced
a big slurp of white wine
1 tsp of tomato paste (or 2 tbsp of pasta sauce)
1 tsp paprika
salt
In a bowl mix all the ingredients together and sit in the fridge for at least 30 minutes or until ready to cook.
When ready to cook. Put 1 tbs of coconut oil in a fry pan and with a dessert spoon make meatballs out of meatball mixture. Add meatballs one at a time while pan heats up. Once they are nearly cooked add a tin of crushed tomatoes, garlic, onion, paprika, zucchini wine and salt. Bring to the boil and then let simmer for about 15-20 minutes.
Serve with rice or pasta.
