Lentil & Couscous Salad

1/2 cup couscous
1/2 cup hot chicken stock
1/2 cup chopped mint
1 tomato diced
1/4 capsicum diced
juice of half a lemon
1 x 400g tin of lentils rinsed
1/4 small onion finely diced or 2 shallots finely sliced
4 marinated artichokes chopped (optional)

Soak couscous in a bowl with hot chicken stock covered for 2 minutes. Then fluff up with a fork and add the rest of the ingredients and mix through.
Serves 4
