Chilli Bacon Pasta

700g spiral pasta
2 Tbs coconut oil
6 rashers of middle bacon diced into medium to large pieces
1 spanish onion diced
125g of grape tomatoes halved
4 pieces of kale.  Take off leaves from the stem and slice.
1 heaped tsp sambol olek
3 large cloves of garlic finely chopped
2 slurps of white wine
avocado oil
salt and pepper

Cook pasta.

While pasta is cooking.  In a large fry pan add coconut oil and bacon.  When bacon is nearly cooked add onion, grape tomatoes and kale.  Cook for about 2 - 3 minutes.  Then add sambol olek, garlic and wine.  Add a drizzle of avocado oil if it's dry.  Add salt and pepper and mix through. Cook for another minute or 2 on a medium to high heat.  Once pasta is cooked and drained add to the fry pan on top of the bacon mix and drizzle a little avocado oil over the pasta and then mix through.
Serves 3-4.
