Marinated Chicken Salad
Marinade
Lemon zest from half a lemon
The juice of 1 lemon
2 cloves of crushed garlic
1/4 cup olive oil
2 tsp seeded mustard
2 tsp soy sauce
salt and pepper
500-600g chicken tenderloins
Mixed salad leaves
Half spanish onion sliced and halved
1 large cucumber cut down the middle and sliced.
Marinate chicken in 1/4 to 1/2 the marinade for at least 15 minutes.
In a large bowl add salad leaves, cucumber slices and onion and dress with the left over marinade. Distribute into serving bowls.
Once chicken is marinated cook on BBQ or fry pan. When cooked, cut up in small pieces and put on top of salad. Sprinkle some salt over the top and serve.
