Fried Rice

1 tbls sesame oil
1 onion diced
1 large carrot grated
1 capsicum diced (any colour)
1/2 cup peas
4 eggs
1 tbls soy sauce (or more to taste)

Optional extras
3 bacon rashers chopped and cooked
125 corn kernels
6 shallots chopped

Boil 2 cups of rice. In a fry pan add sesame oil and chopped vegies. If you have a kitchen whiz. Throw all the vegies in except the peas and quickly whiz, which saves chopping and time. Whisk 4 eggs in a bowl and microwave for 2 minutes or until eggs are cooked. When cooked mash lightly with a fork then add to the vegies. Mix in cooked rice with vegies and add soy sauce to taste.
Serves 4 if eaten on it's own.
