Quick Baked Chicken Pieces 3 ways

Honey Lemon Chicken
½ kilo of chicken tender loins
juice of 1 lemon
3 tbls honey
2 tbls seeded mustard
Sweet Chilli Chicken
½ kilo chicken tender loins
2 tbls sweet chilli sauce
2 tbls soy sauce
2 cloves garlic crushed
Honey Soy Chicken
½ kilo chicken tender loins
2 tbls soy sauce
2 tbls honey
2 cloves galic crushed

Use a baking dish 28cm x 21cm, that just fits the chicken in.  As you want the chicken to be covered in the marinade so it doesn't dry out. If you bake in a larger dish the chicken will dry out as it cooks, but you want to keep the chicken close together and in the juices as it cooks.
Mix marinade in a bowl then pour over chicken and bake 200C for about 20-25 minutes until chicken is cooked.
You can also use chopped chicken breast instead. I like to use the tender loins as you don't have to chop them.
