Chicken Nasi Gorgeng

 2 cups of rice

1 tbsp coconut oil
3 eggs
2 tsp sesame oil
1 onion diced
1 small carrot grated
1 cup of peas
4 chicken tenderlions chopped
3-4 cloves garlic chopped
3 tbsp kecap manis
3 tbsp tomato sauce
2 heaped tsp sambal olek
1 lemon

Cook 2 cups or rice.  While rice is cooking heat coconut oil in pan.  Whisk eggs and fry in pan. Gently scramble.  Once cooked set aside in a bowl with grated carrot.  (I grated it over the top of the egg.)
Add sesame oil to pan with diced onion and chicken.  Cook for 2-3 minutes until chicken is  mostly cooked.  Then add garlic, sauces and peas.  Cook for 1 minute.  Then mix through the egg and carrot.  Once rice is cooked mix through in the pan with the veggies.

Serve in a bowl with a wedge of lemon.
