Raw Caramel Slice
Base
1 cup almonds
1/4 cup shredded coconut
1 cup fresh dates
30g coconut oil
Filling
1 cup fresh dates
2 tbl coconut oil
1 tbl maple syrup
1 cup raw cashew nuts (soaked for 2-3hrs)
dash of salt
Base: Put all ingredients in a thermomix or food processor and combine until a dough forms. Grease a lamington tin and place the mixture in the tin. Smooth out to about 1cm thickness and set in freezer.
Filling: Drain the cashew nuts and put all ingredients in a thermomix or food processor and combine until creamy. Spread over prepared base and leave in the fridge. It can also be stored in the freezer for up to a couple of weeks.
