Pomegranate Quinoa Salad

3/4 cup of quinoa
1.5 cups water
Salt and pepper

Bring quinoa to the boil then reduce slightly and cook until all the water has evaporated.  Once evaporated add some salt and pepper to taste and leave to cool.

1 stick of celery sliced
1/2 green capsicum diced
1 lrg shallot sliced
3 tbl slivered almonds
2 sprigs of parsley chopped
1 pomegranate

In a fry pan brown off the almonds.  Once the quinoa has cooled off add the rest of the ingredients and mix through.
