Vegetarian Curry
3 garlic cloves crushed
1-2cm garlic grated
1 onion diced
2 potatoes diced
1 tin of tomatoes
2 cups of vegetable stock
1 tbls curry powder
olive oil
400g tin of lentils
(optional vegetables - spinach, cabbage, carrot, sweet potato, pumpkin)
In a fry pan drizzle some olive oil and add diced onion. Fry 1-2 minutes. Add ginger and garlic and fry for 1 minute. Add potatoes and tin of tomatoes. Then add 2 cups of vegetable stock and curry powder. Add optional vegetables. Bring to the boil and then simmer for 20 minutes or until potato is cooked.
You can add whatever vegies you want.
