Baked Lamb Cutlets

12 lamb cutlets
olive oil
5 cloves garlic crushed
juice of 1 lemon
oregano
2 tomato's quartered
1 Red capsicum thickly sliced
salt

Preheat oven 200 degrees.
Spray olive oil on a baking dish.  Put all the cutlets in the baking dish and pop in tomato quarters when you can fit them.  Put slices of capsicum around the edge of the dish.  Place crushed garlic on all the cutlets and tomato.  Squeeze lemon juice over all the cutlets and sprinkle with oregano and salt. Drizzle olive oil over cutlets and place in oven.

Bake for 50-60 minutes.

Eat with:
On another pan bake other vegies such as broccoli and cauliflower or pre boiled potatoes.
