Warm Rice Salad

2 cups of cooked rice
1 capsicum diced
1 onion diced
1 medium size sweet potato diced
season salt
1 punnet of cherry tomato's halved.
2 Tbls Rice bran oil

Dice sweet potato.  Put on a tray and sprinkle with season salt and olive oil.  Bake in the oven 200 degrees for about 20 minutes or until cooked.  Fry diced onion and capsicum.  Once onion, capsicum and sweet potato are cooked mix in with the cooked rice, cherry tomato's and rice bran oil.  Add more seasoning if desired.  Ready to serve.
