Potato Garden Salad

3 cooked potatoes largely diced
2 carrots chopped
125g snow peas
1/2 spanish onion finely diced
2 avocados diced
1 punnet cherry tomatoes quartered
1/2 yellow or red capsicum sliced and chopped
100g ham and or salami sliced (optional)
1/4 cup slivered almonds toasted
hand full of parsley chopped and basil (optional)

Dressing
3 tbsp apple cider vinegar
1/4 cup of olive oil
3 tsp whole egg mayonnaise
1 clove garlic crushed
salt & pepper

Chop potatoes in large bite size chunks and cook.  When just about cooked add chopped carrots for 1 minute then add snow peas and turn off stove.  You only want to blanch the snow peas.  Leave for 1 minute then drain.   Then put in a bowl with the rest of the ingredients.  Lightly dry fry almonds in a fry pan.  Dress salad then finish off with almonds on the top.
