Bean (or brown rice) & Lentil salad

400g tin lentils
420g tin five bean mix (or 1 cup of brown rice)
1 small red or yellow capsicum diced
1/2 red onion diced
1 stick of celery chopped
handful of parsley chopped
few leaves of basil chopped (optional)

Dressing
3 tbsp cup apple cider vinegar
1/2 cup olive oil
1 glove garlic crushed
2 tsp honey

Wash beans and lentils (or cook rice).  Then mix in a bowl beans lentil (or rice) with diced capsicum, onion, celery, parsley and basil.

I make the dressing in a jar and shake.  Then dress the bean salad with half the dressing and mix through.  Add more dressing if desired.
