Potato Salad

4-5 large potatoes peeled and chopped
1/2 onion finely diced (purple or brown)
2 tbls seeded mustard
4 tbls whole egg mayonnaise

optional
add 2 sweet potatoes peeled and chopped
4 boiled eggs cut in 1/4's

Chop potatoes into large bite size chunks and boil. If you're adding sweet potatoes add those to the boiling potatoes half way through cooking as sweet potato doesn't take as long to cook. Dice half an onion and put in a large bowl . Once potatoes are boiled add to the onion and let it cool off a bit. Then add mustard and mayonnaise and and mix through. Next add chopped eggs and mix through lightly, so as not to break the eggs up too much.

Eat warm or cold.
