Curry In a Hurry
To start with, is the base curry recipe and then you can add any of the optional ingredients. For lactose free use soy milk.
1 onion diced1 400ml tin of coconut milk (or soy milk)
1 or 2 tbls curry paste (or 1 tbls curry powder) depending on how hot you want it.
2 gloves garlic crushed
(The rest of the ingredients are optional)
1 tsp sugar (add at the end if you think it needs it)
1 cinamon stick
4 chicken thighs or sausages
1x 400g tin of tomatoes
1 tin of lentils
200 gm pumpkin
2 potatoes
2 carrots
1 small sweet potato
1 zuccini
1 capsicum
I made this with chicken, soy milk, tomatoes, cinamon and lentils and it was great!
If making it with chicken or sausages. Cook chicken or sausages in a fry pan first then put aside.
Boil whatever vegies you choose to use that need cooking.
Fry onion in rice bran oil and then add garlic, curry paste and cinamon stick. Then add a tin of tomatoes and vegies that don't need precooking and cook for 5 minutes. Next add the cooked vegies. Then add the milk, lentils and cooked chicken or sausages and mix through. Don't boil once the you add the milk or it will curdle.
Serve with rice.
