Chilli Chicken Lemon Pasta

2 chicken breasts chopped or thighs
rice bran oil
1 long red banana chilli deseeded and chopped (these chilli's aren't hot)
2 cloves of garlic crushed
1 lemon juiced and zested
3/4 of bag english spinach
half to 1 bag 250g of parmesan cheese (depending on taste)
Salt & Pepper
3/4 packet of spaghetti
Boil pasta
Chop chicken and fry in rice bran oil with garlic and chilli, then add lemon juice and zest. Once cooked put pasta in chicken fry pan and mix with S & P. Making sure this stays reasonably hot then transfer on top of spinach in a bowl. This cooks the spinach. Leave until spinach has wilted and then mix through with parmesan. Ready to serve.
