Chilli Beef & Quick Guacamole

This can be served with rice or you can make burritos or tacos with it.
500g mince
1 onion diced
1 small capsicum diced (any colour)
1 cob of corn. (or 1 sml tin of corn kernels)
1 grated carrot
2 cloves of crushed garlic
2 tsp cocoa
1/4 tsp chilli powder or more depending on how hot you want it.
1x 400g tin tomatoes
1x 300g jar of salsa
Optional 1x 400g tin of beans of your choice. (I use 3 bean mix)
Fry onion in rice bran oil, then add garlic. Add mince. Once mince is cooked add capsicum, carrot, corn, cocoa, chilli powder, tomatoes and salsa and simmer for 10 minutes. Add beans before serving to warm through.
Serves 6
If you don't have fresh vegies use 1 cup of frozen vegies such as peas and corn.
Another alternative is to make soft tacos. On a baking tray I cover half the tortilla with chilli and fold it over. Sprinkle cheese on top and put under the gill. Make as many as you'd like.
Quick Guacamole
3-4 Avocadoes
juice from ¼ lemon or lime
½ tsp salt
I make my recipes to taste. So the above is just a guide. You might like more lemon and salt.
To be a bit more fancy add any of these ingredients or all - half a finely diced onion, chopped coriander and 1/2 finely diced tomato.
