Braised Sausages with Onion Couscous
1/2 onion diced
1x 400g tin tomatoes
1 clove garlic crushed
4 cooked sausages
400g can of lentils or any can of beans
1/3 cup of olives chopped (optional)
1,1/2 cups of couscous
1 tbs olive oil
1 cup of hot chicken stock
1/2 onion diced
Fry 1/2 an onion in rice bran oil. Put couscous in a bowl with 1 cup of hot chicken stock and 1 tbsl olive oil. and leave covered for 2 minutes (no longer). Then fluff up with a fork and mix through cooked onion.
Cook sausages and set aside
Fry onion and garlic. Then add tomatoes, cooked sausages, olives and lentil or beans and mix through.
Serves 4
For the vegetarian leave out the sausages
